Ingredients
- 1 ounces Cheese, Parmesan, low sodium
- 0.75 pounds Chicken, breast, with or without bone, battered, fried, prepared skinless, coating eaten
- 0.50 ounces Cornstarch, dry
- 1 cup Tomato and vegetable juice, mostly tomato
- 1 small Onions, mature, raw
- 0.50 ounces Parsley, raw
- 1 pat (1" sq, 1/3" high) Butter, stick, unsalted
Preparation
Preheat oven to 350 F. In a saucepan, cook onion in butter until tender, about 5 minutes. Combine vegetable juice, chopped parsley, basil, 1/4 tsp of dried Marjoram, and cornstarch; stir into onion mixture. Cook over medium heat, until thickend and bubbly. Arrange chicken breasts in dish and pour mixture over the chicken. Cover with foil and bake for 50-55 minutes. Sprinkle with parmesan cheese and bake for 5 more minutes.
